Q: What did you showcase at IFFA in terms of cutting-edge innovations?
At the IFFA trade fair, we unveiled the PIC LOMO, the first fully automatic machine for the production of Lomo Ibérico. Thanks to a range of dedicated accessories, the machine stands out for its versatility, as it can also be easily adapted for the production of other traditional cured meats such as bresaola, pancetta, and coppa.
Q: Could you list your innovation’s primary advantages?
This machine offers multiple advantages. First and foremost, it eliminates downtime by using the casing directly from the reel, removing the need for manual loading onto the stuffing tube. This allows for continuous operation until the reel is fully used. Another key benefit is the automatic loading belt, which enables the machine to be operated by a single person. Finally, the products come out already packaged and equipped with a string, making them ready for hanging during the curing process.
Q: What distinguishes your innovation and solutions from analogues offered from your competitors?
The PIC LOMO is a true game-changer in the market: there is currently no other machine like it among competing solutions. It is, in fact, the very first fully automatic machine specifically designed for the production of Lomo Ibérico. Until now, this product has been manufactured either through traditional manual methods or semiindustrial processes that still required the operator to manually handle stuffing, clipping, and hanging. With the PIC LOMO, everything changes. This machine is the only one capable of fully automating the entire production cycle, ensuring high standards of efficiency, hygiene, and consistency in the final product.
